March 1, 2019 By Mike Thurstone

Have you ever stumbled upon a delicious new recipe on Facebook that you’ve been cooking all your life, only to discover that you’ve been doing it wrong all this time?

Check this out – Hasselback Maple Pecan Sweet Potatoes!

Before you begin, it’s interesting to learn that Hasselback potatoes are an originally-Swedish technique for cooking roasted potatoes. This technique gives the sweet potatoes a delicious crunch, looks fancy and will change the way you cook roasted potatoes.

Recipe – Hasselback Maple Pecan Sweet Potatoes

What you need:

-Two sweet potatoes
-Two tablespoons melted butter
-One tablespoon ground cinnamon
-One tablespoon vegetable oil
-Salt and pepper
-Half a teaspoon vanilla extract
-Half a teaspoon kosher salt
-¼ cup pecans
-¼ cup maple syrup

Serving size: 2
Preparation Time: 5 minutes
Baking Time: 40 minutes

Start by preheating the oven before 425°. To get the desired Hasselback look, place two chopsticks under the potato, and use a knife to cut through. The chopsticks at the bottom will prevent cutting all the way to the end. Place the potatoes on an oven tray, brush it with some oil and season with salt and pepper. Bake for 30 to 40 minutes until soft. Remove the potatoes from the oven and increases the temperature before 450°. In a separate bowl, mix the melted butter, cinnamon, maple syrup, pecans, vanilla extract and kosher salt and sprinkle the potatoes with the mixture. Put it back in the oven for another 8 to 10 minutes. Allow it to cool before serving.

This delicious recipe is a perfect winter meal, that the whole family will love. It looks impressive, it’s crunchy and not difficult at all to make. Don’t be afraid to play around with it and add some of your favorite ingredients to it. Enjoy!
